Philosophy

Description
The course, which lasts a weekend, is open to men and women as well and aims to emphasize the game meat which has always been wrongly considered too heavy and spicy while, on the contrary, it’s particularly suitable for diets and treatments as it contains little fat and is completely biologic as wild animals eat natural food which they can find in the woods.
Cooking game is easier than one can imagine and the different ways of cooking and combining it with other fruits of the wood let you juxtapose flavours which already live together in nature….

DEER WITH HAZELNUTS
Kitchen is a poetry of fantasy and feelings which spread from our own mind before being in the plate or in the pan! One of the things which has always fascinate me is mixing together flavours and fragrances which already cohabit naturally and which have always been useful one for the other in order to live in harmony in a kind of circle which I’m trying to reproduce…The fruits of the forest, a symbiosis among flesh which – when still alive – feeds and grows by drawing the natural resources of the forest according to the different seasons of the year – now mushrooms, now fresh vegetables - now wild fruits, now a raid to the vineyard or to the orchard of the farmer…
All these things combined together thanks to the genius of man find an unique combination in our cooking as dressing are the same substances which fed the wild animals and made more valuable their fleshes and man is able to combine them together again so that they can last their living in order to give happiness to whom is able to taste them…

Participants can take part to the following activities: natural guided and photography, horseback riding, spa and beauty centre, Tuscan landscape watercolour lessons, guided tours of cities of art, children workshops: scientific, natural-didactic and musical…
