Breeding

Breeding: Within the property we have large fenced areas dedicated to the half-wild breeding of indigenous races, already on the way to extinction, as the Maremma cow, the “cinta senese” (particular kind of pork) and the wild boar of the Maremma. The cows of the Maremma race are characterized by their majestic size and long horns while the pigs raised at the farm belong to the oldest and most precious race called Cinta Senese: it differs from other races due to the black colouring of its mantle with a white strip like a belt - “cinta”- around the forelegs, the withers and the back – typical of the area since the 13 century.
Our guests can taste original Tuscan dishes based on meat and sausages made by our own breeding at our restaurant L’Imposto.

Woods and fields: Just by walking through the paths or crossing the Mediterranean brushwood of our property guests have the possibility to admire huge and solitary oak trees and beech trees which invite to rest under the shadow of their enormous crowns.Cork trees, unlikely unique in the north, let you admire their beauty when they are decorticated in June and July for the extraction of their fine material, which emphasizes the particular colour orange-pink of the trunks after fresh decortications.
Alternating to the woods there are fields dedicated to the cultivation of olive trees for the production of the famous Tuscan olive oil; in autumn you can even take part to the olive harvest (hand made). From the crushing you get an excellent oil which is the perfect dressing for salads and for the famous Tuscan “fett’unta”.
But the main part of the property is dedicated to the cultivation of cereals, legumes as well as to pastures and grasslands.
And finally there’s the viticulture for the production of wine: in November you’ll be able to taste a good genuine wine, completely natural made thanks to the climate, the altitude and to the particular vocation of this land!!
